How to properly maintain a chef knife to extend its life?

June 04, 2024

Proper care of chef knives is essential to extend their lifespan. Here are some key care steps and suggestions:

Regular Cleaning

◪ Clean the knife immediately after use to avoid food residues on the blade to reduce the chance of bacterial growth.

◪ Use warm water and neutral detergent to gently clean the blade. Avoid using acidic or alkaline detergents as they may corrode the blade.

◪ After cleaning, wipe the knife dry with a clean towel and make sure the blade is completely dry to prevent rust.

Proper Storage

The knife should be placed in a dry, ventilated place without direct sunlight. Avoid humid environments, as humidity can easily cause kitchen knives to rust.

If there is a professional temperature-controlled, dehumidified storage cabinet, it is a better choice.

The knife should be placed on a knife holder or other appropriate storage tool to keep the blade isolated from other items to avoid collision and damage.

Regular Sharpening

No matter how high-quality the knife is, it will become blunt after long-term use. Therefore, regular sharpening is essential.

Before sharpening, make sure that the sharpening tool and the blade are dry. Use the correct angle and force to pass along the surface of the sharpening tool.

After completion, wipe the blade with a damp cloth to ensure that no ground particles remain.

Anti-rust Treatment

If the kitchen knife is already rusty, you can use a special rust remover to remove the rust, and then apply a thicker layer of oil for protection.

After each cleaning or when it is not used for a long time, a thin layer of oil should be applied to the blade to prevent rust and act as a lubricant.

Avoid Contact With Corrosive Substances

Acidic fruit juice, sweat on the hands, oil stains and other corrosive substances can easily corrode the blade, so be sure to deal with them in time after use.

Use The Right Food Board And Cutting Method

Use wooden or plastic cutting boards, which can maximize the protection of the kitchen knife blade and make it less likely to dull quickly.

When cutting ingredients, use the correct cutting method to avoid unnecessary damage to the blade.

By following these maintenance steps and suggestions, you can ensure that the chef's special knife maintains good performance and sharpness, thereby extending its life. Remember to regularly care for and maintain your knives to ensure that they always perform at their best during cooking.
