Tool selection and maintenance

1. Knives Kitchen and home kitchen knives are tools for food cooking operations. Knives can be selected according to their uses. They are generally used for dividing, shredding, slicing, dicing, and bone-cutting. For chopping and batching, it is advisable to choose a thin slicer knife; for chopping and cutting cooked food, a stainless steel worker's knife is better; It is more reasonable to use a slicer knife and a chopping knife in the family kitchen. According to the raw materials and production process of the knife, it is divided into:

1. Pure steel knives: made of stainless steel, butcher knives, etc., the production process is stamping and forming, which should be cut rather than chopped.

2. Steel-embedded knives: such as traditional carbon steel and composite steel knives, the production process is forging and forming, which is suitable for cutting, chopping, and easy to rust.

Purchasing method: 1. Select the two sides of the tool: smooth and clean, without forging dents. 2. The thickness of the selected blade is uniform: the exposed steel is moderate, the edge of the blade is straight but not twisted, and the edge of the blade forms a black straight line without "white edge".

3. The back of the knife, the head of the knife and the heel of the knife are ground flat, "not showing black", no burrs, and no handle. 4. The knife handle is installed straight and firm, and the knife hoop is not loose.

Use and maintenance: 1. Please use them separately for bone cutting and meat cutting according to different purposes. The knives are not suitable for cutting or cutting hard objects such as metal and wood.

2. When chopping bones, it is advisable to use the heel of the blade to touch the bone. At the same time, it is better to chop the bone at the obtuse angle of the blade, and drop the knife vertically. If the bone bites the edge of the knife, it is not advisable to shake it from side to side and try to pull out the edge of the knife. The correct method is to lift the bone together with the knife and chop until the bone breaks.

Otherwise, it will cause the edge of the knife to break the steel and form an arc-shaped gap, which is improper use and not covered by the warranty. 3. The knives should be washed, wiped dry, and coated with cooked cooking oil after each use, and placed in a ventilated, dry place, away from water and gas stoves to prevent rust. (Stainless steel knives will produce yellow spots when exposed to carbon monoxide gas, which should be prevented) 4. The traditional household anti-rust method is to soak carbon steel knives in rice swill to prevent rust.

2. Scissors Household civil scissors can also be purchased in different models and specifications according to the needs of the purpose. Usually 1 and 2 civil scissors are suitable for making clothes at home; 3, 4 and 5 civil scissors are suitable for opening the clothes machine lock button; front steel nail scissors are suitable for cutting fingernails and toenails; long head scissors, elbows Scissors, etc., 7, 8 small scissors are suitable for home embroidery and thread picking. Suit scissors 1 and 2 are for professional sewing workers, 1 for men and 2 for women; 3 and 4 are for family tailoring.

How to choose: 1. Check whether the two foot rings are flat and the arcs are symmetrical. 2. Check whether the edge of the scissors is straight and without gaps. 3. Check whether the tips of the heads of the two scissors are neat, close together, and not in place (commonly known as "overhead").

4. Check whether the steel on the edge of the knife is even, and the steel on the outer edge is clear, free of dust, broken steel, and soft edges. During the trial, the opening and closing of the cutting edge is very smooth, without bumps, achieving the feeling of "moisturizing things silently".

Use and maintenance: When using scissors, pay attention to the fact that the items you are cutting are consistent with the bearing function of the scissors, that is, use slightly larger scissors for cutting thick layers of fabrics; use particularly sharp scissors for cutting thin layers of silky items, otherwise it is easy to damage Also, be careful not to use the pointed part of the scissors to pry hard things. Generally, civilian scissors are not suitable for cutting hard metal objects.

When using the scissors, if the opening and closing feel is too tight, there is a simple method, that is, hold the scissors in hand, aim at the pin and knock on the hammer, and the more you knock, the looser it will be until it fits. On the contrary, if the scissors feel that the cutting edge is too loose when using the scissors, place the scissors nail on the iron pier, and use the other hand to lightly tap the scissors nail with a hammer. Knock and try until you get it right.
