The origin of the name of Sang Dao in the Chinese kitchen?

2023/02/04

Recently learning Chinese cooking, the teacher told us about Sang Dao, but we don’t know much about the origin of the name? ? Why is it called such a name? The leaf knife in the "Three Knives" is a traditional product of Haining, Zhejiang. "Zhou Shunxing" improved the forging and casting process on the basis of local kitchen knives, and made a thin and sharp leaf knife with low price and high quality, which can cut leaves like hair and is suitable for feeding young silkworms, which is very popular among silkworm farmers. But it is said that during the Guangxu period of the Qing Dynasty, the Empress Dowager Cixi heard that Haining had the name "Yedao", and thought that it was a taboo to violate her name "Yehenala", so the ban was changed to "Sangdao". (that is, the knife for cutting mulberry leaves).

There are two main types of traditional Haining kitchen knives. One is a broad knife with a round head. The front part is covered with fine meat. It is extremely sharp. The knife cuts the meat into thin slices. Slightly convex, it can also be used freely on slightly concave pier boards. It is said that the first medium for this kind of kitchen knife to be introduced to the capital was the Haining Chen family (Chen Yuanlong's family), because the Chen family of salt officials was full of officials in the capital.

They went back to their hometown and brought the local specialty kitchen knives into the imperial palace’s imperial kitchen. After using it, the chefs of the imperial palace felt that it was incomparable with other knives, and later became the special knives of the imperial palace. Regarding the descendants of the "Three Swords in Haining", there is another legend that "Zhou Shunxing" was originally the two sons of Zhou Tieshan, a family of swordfighters in Tengzhou, Shandong, namely brothers Zhou Shun and Zhou Xing. Because the Zhou family was favored by the emperor in the Ming Dynasty for casting weapons for the imperial court, after the Qing soldiers entered the customs, they first arrested the Zhou family.

In order to take refuge, the father and son fled to Longquan, Zhejiang Province three times, and opened the Huaguo Sword Shop, which is famous for fighting swords. At that time, the Qing government heard about the good news and ordered Zhou Tieshan to fight for the Qing government. However, Zhou Tieshan was a tough guy who would rather die than obey, so he was killed by the Qing soldiers. The two sons fled overnight and traveled all the way to Haining, where they were taken in by an iron shop outside the North Gate.

According to the local market, Zhou Shun and Zhou Xing drew on the strengths of "Shandong Sword" and "Longquan Sword" to create the famous "Haining Three Swords". Therefore, the shop name "Zhou Shunxing Iron Shop" is famous all over the south of the Yangtze River in the name of the two brothers, and it has been passed down to this day.
